Black Bean Salad

Contains:

2 cups organic black beans

2 birds eye chillies

2 onions

2 mixed chillies

1 large pepper

1 large aubergine

large handful of mixed leaves

Method:

Chop the onions, chillies, pepper and aubergine

Wash the blackbeans

Mix together, and serve!

When it comes to chopping onions in particular, fear of mascara situations often drives me to utilise a mechanised chopper. It saves managing a kitchen based emotional outburst.

For austerity measures, I halved the salad and packaged a tub for lunch the next day.
