Good Morning Cinnamon Buns

The nearby bakery seems to adhere to impressionistic interpretations of opening times. It was an early weekday morning and I had around three hours to go until they opened their doors. I wanted cinnamon buns and they couldn't metaphorically deliver. Damn those bearded hipsters, my penchant for a breakfast treat was unwavering. 

So, I took to the recipe books, trying to find a hybrid that worked with my ingredients. 

I softened the butter, added the milk and let the fast acting yeast do the work. 

The mixture quickly came to life as I incorporated the ingredients. Then, following the packet yeast instructions, I left it for a few minutes, made a coffee, and shook into life. 

I now had to get serious, adding the dry gluten free flour to the wet mixture. My biceps then went to work kneading the dough. 

Once the dough was all malleable, I rolled it out using last nights empty bottle of Chateau Neuf Du Pape. 

Then comes the fun bit, I used Palm sugar - it caramelises beautifully! I then gently shook ground cinnamon over the sugar. 

Then to seal, I added some extra melted butter. 

Rolled it, sealed it... 

Cut it... 

Then added a bit more... 

Popped it into the oven at 180 degrees celsius for 25 minutes. 

After removing from the oven, I drizzled icing sugar over the tray... 

Ending up pretty content with delicious warm cinnamon buns!
