Lemon Polenta Biscuits
Now, I have a thing for Polenta.
It's probably got alot to do with the fact that I grew up in a remote African location eating predominantly Italian produce. Does that even make sense? We lived in a remote area in the Maluti Mountains, my parents worked for an Italian Consultancy which stocked a supermarket which sold 47 varieties of pasta, alot of Peroni, Ferrero Rocher, Bertollie... and of course, lots of ice cream.
Anyway, for these polenta biscuits you'll need:
To Preheat the oven to 180c/gas mark 4.
120grams plain flour
3no. egg yolks
2no. lemons zested
When cooking I try to either avoid using dairy products or source locally. Farm shops are great for fresh eggs, especially when you can see the hens roaming around happily.
It's the same for the butter used in this recipe, often I will swap for coconut oil, but if I can find good local butter, then what a great way to support the local economy.
Mix the butter, eggs and flour, add polenta and sugar, add in the lemon zest.
Roll out and cut out onto a tray.
Pop into the oven for 25minutes or until golden brown.
Then pop the kettle on and enjoy with a cup of tea!
