Banana Tray Bake

Let me tell you about this intensely easy Banana Tray Bake, we found a bunch of bananas that had been forgot about in an unassuming fruit bowl. Instead of throwing them (I can't stand over ripe bananas!) a quick and easy tray bake saved the bunch. 

 

Contains: 

250grams All purpose flour 

100grams Palm Sugar

150grams Butter - I used salted 

50grams Chopped mixed fruit and nuts 

Juice of 1/2 a lemon

6 small ripe bananas/3-4 large ripe bananas

 

Method: 

Mash the bananas in a large bowl, mix in the sugar and butter until slightly smooth. Squeeze half a lemon into the mixture, stirring as the mixture softens. Add in the flour, then the mixed fruit and nuts, stirring. Fill a shallow tray to around 1inch deep with the mix and bake in a preheated oven for 25minutes at 190c. 

-Serve warm or cool (but warm's best!)
